It doesn't matter, simply create the path list. And the MPQ location means where you want to MPQ to go to, put it into the Data folder.

Forgot to inquire, what other steps do i have to take after the conversion process is completed?

Make sure the MPQ is in the Data folder and named patch-X.MPQ (X being 3 - 9 or a-z)
Then download MEF
Extract all of it's contents into the WoW folder. Run WoW with it, press F8 on the login screen and profit.
By the way the edit doesn't show on the character selection screen and I do have to warn you that it might be buggy, the MES race swaps aren't all that great.

I gave it a shot but it froze upon retrieving character list and subsequently prompted me with a wow error. I know i've seen some make mention of a need for an updated version of the mes? Is that the case?

No, the error has nothing to do with the MES. Did you press F8 on the log-in screen?

Mmk, until i can rectify it, is there a way to temporarily revert it so that i can continue to play?

Just take the MPQ out of you Data folder.

The MPQ i created? Should i just back it up or can i create another one when i attempt to covnert again?

What I meant is just take it out of the Data folder, put on your Desktop or something.
Tho you can re-create it always yeah.
