Which version of wow is the best for ME

Hello I am reinstalling wow atm because I'd like to try out some model editing and as far as I know u can only do small edits in the current patch like race, mount swap etc. So I'd like to know which version of wow u recommend if I want to do some world editing etc and would like to get some tips with like versions and program that I can use that are compatible with the version that u recommend.

I don't care about the expansions just old school stuff.
