it all depends how far down the perverbial "rabbit hole" you wana go

i started off w/ demonkunga's tools, and krazee's model edit guide for dumies.
    (might have botched the names)

the tools list has been redone w/ the newest versions(think its sticky'd on the guides section) and the guide hits the basics, though you might wana try it as you read a few times

to start out, use, myWarCraftStudio, wowimage-blp-0-991, and wowmodelview
(in the tools list) also Glitchy's MES helps too(explains below)

for the most part you wont need MEF (model edit fix) (ive never use it, cause i cant get it to work)
MEF is a extension program for WoW to make edits of the world itself and character race, work, might effect more but i wouldnt think to much on it

i myself feel that in this case, the basics are best learned by trail and error, but i will offer tips

    1. files you work w/ most are
.mpq or .MPQ = "archive" file, these files hold the files that you work w/ and your finished work
    .m2 = shape file
.blp = "skin" file (object colors)
.png = you convert .blp files to this type to edit them in paint/ image editing programs then back to .blp again when done.

    2. if it crashes game or glitches, dont do it.

basicaly if you dont affect the world itself or your character directly (race, armour mods) your usualy fine

    3. direct character "reskin" mods work (w/o MEF)
"reskin" mod is changing the apearance w/o changing the shape of item/creature,ect.
like color change or taking a "skin" of an item, creature, character, and replacing it w/ that of another

for example, i use Glitchy's MES to do race conversion, blood elf male to undead male

then i use the warcraft studio to open the mpq made by glitchy's mes, and remove the .m2
file from it (looks kinda cool)

(Glitchy's MES does the actual file swaping for you, though some functions you need to have already "extracted" the files your editing)
i dont have the knowledge of this program to speak much more of how to use it

i appologize for the long post and that i wont be able to offer further help, but i hope you find this post usefull

have fun and luck in your endeavors
