Editing a model face

How would one edit the face of a character? I am working on a Female Gnome to Female Tauren but when I did the edit the face of the gnome wasn't very pretty and I want to edit but can't figure out how to. I tried to replace the skins for what face and skin combo I thought it was but it didn't work at all. So does anyone know how to edit faces?
