Probably a dumb question, but is it possible to change race to another race (gnome to undead) but still have all other gnomes show up as gnomes and only myself as undead?

All models share the same principe, whether it's different clothed or not, they share the same model. If you swap a weapon model with another weapon, you get the same results. So no, if you swap a gnome with undead, all gnomes will be affected by it.
