Now, this may be server dependent but on my auction house mithril ore is usually much cheaper than mithril bars. It is very easy to take advantage of this and smelt the ore into bars for a quick and easy profit. It sounds simple, and it is but it is also very profitable.

Steps.

1. Check if Mithril Ore is cheaper than Mithril Bars.

2. If it is, buy out Mithril Ore in bulk.

3. Smelt and profit.

why not mention smelting tin and copper ore and smelt again to make bronze bars while you're at it? it is pretty common sense for anyone who has mining.
