Right, seeing as how PTRs are up and info started appearing on sites, here's a few things that might or might not be profitable. Most of the info comes from ************.com but I compiled it here for easy refference.

1. Glyphs. Lots of glyphs are getting buffed. It might be worth stacking for 3.1. Demand should increase because of 2 reasons:
a) dual spec, hence almost double demand for glyphs
b) glyphs that were previously okish or good now become great.
A few examples:
- Glyph of Heroic Strike -- Increases the critical strike chance of Heroic Strike by 5%. (Old: You gain 10 rage when you critically strike with your Heroic Strike ability.) looks to become pretty useful.
- Glyph of Sweeping Strikes -- Reduces the rage cost of your Sweeping Strikes ability by 100%. (Old: You generate 30 rage over 12 sec when you use your Sweeping Strikes ability.) - will perhaps become more useful for arenas?
- Glyph of Overpower -- Adds a 100% chance to enable your Overpower when your attacks are parried. (Old: 50%) got its effect doubled, looks really nice for PVP
- Glyph of Adrenaline Rush -- Increases the duration of Adrenaline Rush by 5 sec. (Old: Decreases the cooldown of Adrenaline Rush by 60 sec.) Not a lot, but considering the old effect will become baseline, it's quite nice.
- Glyph of Inner Fire -- Increases the armor from your Inner Fire spell by 50%. (Old: Increases the charges on your Inner Fire spell by 20.), looks like a handy boost for PVP.
- Glyph of Exorcism -- Increases damage done by Exorcism by 20%. (Old: Your Exorcism also interrupts spellcasting for 2 sec.); with Exorcism usable on all targets, this one might become in demand.
- Glyph of Ice Lance -- Your Ice Lance now causes 4 times damage against frozen targets higher level than you instead of triple damage. (Old: Increases the range of your Ice Lance by 5 yards); an extra 30% damage boost - what's not to like?
- Glyph of Plague Strike -- Your Plague Strike does 60% additional damage. (Old: 20% additional damage if a disease was on the target) - a nice buff.
- Glyph of Death Strike -- Increases your Death Strike's damage by 2% for every 5 runic power you currently have. The runic power is not consumed by this effect. (Old: 2% regardless of runic power) - in other words "this glyph's effect has been increased by 150%" :P
2. Blacksmithing. New items will be introduced. They will use current existing materials as well as a new drop, the "Runed Orb". Runed orb sources are currently unknown, but will most likely either be like Frozen Orbs (BOE) or like Nether Vortexes initially were (BOP). Either way, my business sense tells me that the other materials required for these items will see an increase in price and therefore may be worth stocking:
- Titansteel Bar
- Saronite Ore/bars
- Eternal Earth

3. Jewelcrafting:
The good old Black Diamonds we all know from vanilla WoW seem to be back. Nobody knows yet what they will result in, but it might be worth your while to check the AH. I managed to buy about 100 today for prices ranging from a few copper pieces to at most 2 silver/piece. That's at most a couple of gold with a potential profit. Even if they turn out to be completely useless, those 2g won't hurt me one bit.

4. Leatherworking. New items will be introduced. They will use current existing materials as well as a new drop, the "Runed Orb". A level 29 blue neck with hit rating will also be introduced which looks quite awesome for levelling, considering how good hit rating is and the lack of it at low levels; This may lead to an increase in Truesilver Ore/Bars.

5. Engineering. Only one interesting item here:

Note that it doesn't require engineering; whether this is final or will be fixed is to be seen, but if it stays like this it will again be an awesome trinekt for levelling (perhaps twinks too?), considering there are almost no low level trinkets if you aren't an engineer. This one is also made from Truesilver, goes without saying that it might be a good idea to stockpile it.
Disclaimer:
1. The Runed Orbs' provenience is still unknown. Depending on where they come from and whether they are BoE or not and how abundant they will be, all the above might be useless. Ie, they could turn out to be like Sunmotes (quite rare), in which case they will be the limiting factor and not titansteel, icy dragonscales, etc.
Or they could drop alongside Frozen Orbs (not very likely, but you get the picture), in which case everyone and their dog will want one of those items, which will lead to big profits for those that stocked titansteel, etc when it was cheaper.
2. I am in no way knowledgeable about all classes (although I know a fair bit about every class), so my judgement about glyphs may be wrong (ie, the Heroic Strike one may be complete crap). To decide whether a glyph will become more wanted, check comments on wowhead, use your class knowledge about the class, etc.
