After I scam their account, I log back on AIM after a bit, unblock them, and tell them that I feel badly and wish to give them their account back.
You need to basically sell it. Tell them that you don't feel right, and after having some reflection on it, your morals are prompting you to return their account. They should be ecstatic. Tell them that you don't HAVE to give the account back, but out of the goodness of your heart, you will.
Then, you tell them that you are willing to change the email back to theirs, but since the email has been changed in the last 48 hours, it is asking you for the SQ/A and last name on the account (or whatever else you want) for SECURITY REASONS.
Tell them that it's asking for the Full Name on the Account and the First Password used initially to sign up (just for a BS Filler to make it more believable).
They'll tell you their last name & whatever other information you asked for.

I don't have any logs, seeing as I haven't scammed in a while via AIM in a while. In fact, I just renewed after a 5 month break from wow just this week. I assure you that it works though.
