How does blizz look into item ID

for example engineering, lets say I have an item crafted by Mousepad, would blizzard see the item as ''crafted by Mousepad'' or crafted by ''insert ID number''?

probably created by your char id -- since names can change you have a static number associated to your character

so blizz tracks me by GUID and players keep their GUID forever

and the only way to change that would be either transferring characters, either server to server, account to account, or even account to account while remaining on the same server to new character GUID?

Imho you will not get new GUID if you do transfer. Transferring is only changing ID of account for that char.
