Mining and Skinning/Herbalism

So I'm leveling my gathering proffessional while i'm having Cataclysm 10-day trial. Which one I should take with mining? Herbalism or skinning, and why? And if you got any tips for me leveling those professional, just tell

Skinning is rare on my server, so I would say that, but it really is server dependent if you want to make gold. Botting skinning is much easier than mining/herbing, but herbing would work better paired.

I personally like mining/herbing since almost all professions get covered with those. Skinning is mostly just leatherworkers and can have a smaller demand since its easy to level while questing or grinding. With herb/mining you can level your alts professions as well if you want.
