Ok, so this is very simple and is easy if you are patient.
1. First off what you need to do is go to the character log-in screen and Delete (Yes, delete) the character whose name you want changed.
2. Then, (Preferrably on another account) Create a character with the name of the character you just deleted, "Cheese" for example. Note, I did this on the same account and it worked out fine.
3. Wait 1-4 days. The longer you wait the better chance of success (I waited one week)
4. Then, while in-game on a completely different named character (Although, for some reason this worked on the remake of the character's name I had just deleted) make a ticket to a GM saying:
"Hello, a couple of days ago i accidentally deleted one of my characters.
Realm:
Character Name:
Thank you, and sorry for the inconveniance"
5. Then, proceed to log-off so you don't have to have a face to face with the GM.
6. A couple of hours later you should receive an email, below is a copy of what I was sent.

Please keep in mind that each account is permitted a limited number of instances in which the GM staff may assist with the recovery of items or characters lost due to user error. Although we understand that the occasional mistake can be made, we do not want players becoming careless and utilizing the GM Staff as a crutch. Restoration of any kind is not guaranteed. While we will make every effort to verify and restore your loss, the decision to go forward with a restoration is entirely at Blizzard’s discretion.

Note: If you wan't anything cleared up, please state so and I will do my best. Also on a second note, I was not planning to do this and I questioned to my sister "Do you reckon they will restore the character thus giving me a free name change?". Well, I guess we know the answer.
