This still works as of January 26. Did it on my DK.

This mob does hit you but not nearly hard enough to worry about....heck I was even wearing AH cloth Intellect gear to speed things up. My Rune Tap was more than enough to stay ahead of his damage. Also, since he's attacking you also level up Defense skill at the same time.

Massive thanks to the OP. I was really bummed after the nerf to Hellmaw. I even solo'd Sethekk Halls to get the stupid Shadow Labs key only to find out Blizz ner'f it.

You do know they removed Int speeding up your weapon gaining skill a long time ago.

I'm sure it's been said, but the guy in the back of the Maw in the Dragon Blight used to do the same thing. However, I'm pretty sure they fixed this in 3.08a.

Yep I know that it was "removed". There's still some debate as to whether or not is was actually "removed". I can tell you this. I've leveled weapons to max on 3 melee characters since wotlk came out. After drinking Intellect potions, and waering Intellect gear the time it took to level skills was noticeably faster....and I mean by a long shot.

So depending on who you believe it may or may not be entirely removed. But for what it's worth it sure seemed to make a difference for me.
