Okay, very intresting, but Have you an idea where I can find an Orc Model? It should be absolutly a normal Orc, with nothing on, with no beard and Hair ^^

Eh create a new entry in CreatureDisplayInfoExtra.dbc - WoW.Dev Wiki
with:
Race=Orc
CreatureType=Orc(find the IDs by yourself)
HairStyle=Bald(-> CharHairGeosets.dbc - WoW.Dev Wiki)
BeardStyle=look in CharacterFacialHairStyles.dbc - WoW.Dev Wiki
etc.
SkinColor is for the color of the orc
CreatureType must be Humanoid(my mistake sry) you can find the ID in CreatureType.dbc - WoW.Dev Wiki
OK clear, now I begin to understand the matter of my difficulties.
In my mpq editor when I open up a mpq archive (i tried the same you showed up in image) I see only blp files, .m2 and .skin ones are invisible.
The damn thing is that just in 1 case I opened up mpq editor and it showed me off all files (so .skin either), but normally I open mpq and I see only blp files; I downloaded listfile and used it.
So why I can't see .skin files in mpq editor?
