if i change my tauren model to nightelf ,dwarf or something else it keeps more or less the size of the tauren.
that means i get an dwarf that is tall like an human xD

Because i made troll to gnome and my gnome was correct size

Yeah your not following the steps correctly because it should come out completely normal if done right.
