[Question] Cache Editing

Hi, I was wondering if anyone could tell me if it's possible and how it's done to do these things with a hex editor:

1. Change the combat stance for weapons (example: I want to be able to use the unarmed combat stance for female BEs while equipping fist weapons).

2. Swap Mount Models, more specifically, my Winged Steed of the Ebon Blade with a Frostbrood Skybreaker.

I'm trying to find a way to do this with just a hex editor, editing the cache data. I did manage to change the mount model in my mount menu to the Frostbrood Skybreaker, but I can't find the code to alter to change my actual mount into it.
