Glitchy's MES: Great for all around basic and advanced editing
Thread with Model editing programs, including Demonkunga's tools that he uses

Those are inside the main wow MPQs ( Common.MPQ and patch-2.MPQ ( Most of them ar ein Common.MPQ ) Open it with MyWarcraftStudio, and extract the files you need. Modify them, Then create a new MPQ with the file you extracted, make sure it has the same Path too, IE: Patch-3.MPQ ( or whatever you want to call it, if were to replace say... The female Tauren Death sound, you'd have to make sure in the MPQ you make, the path is "Sound\Character\Tauren\Female\" And that the file in that path is called "mTaurenFemaleDeathVoxA.wav" )

If you're looking into something a bit easier, without actually understanding what happens behind it ( Like most people do - Its always good to understand though ) Try Glitchy's MES.

Hope that made sense, i'm a bit tired tonight >.<
