A good mount for the rino may be any of the kodos named:
- black war kodo (pvp)
- great brown kodo
- great gray kodo
- great white kodo (all those from rep with thunderbluff)

Sorry for being a complete noob with model editing, but (once i got the patch-z.mpq from archive) how do i actually implement the model edit?

If i only use the "mount model" change, and dont use it for exploits (different hitbox, etc) - just for seeing it on my screen - is that discoverable / bannable?

no its not bannable. only way to detect it is if you tell ppl in chat lol and get reported . but even then it's own personal use and wont make you benifit over others . you drop the patch in the Data folder in your wow directory .
