You'll need a MEF, linking a post with Kynox MEF.

I've been wondering this exact same question. I currently have my Male Taurens changed to Female Night Elves, my Male Orcs changed to Male Gnomes, and my Male Blood Elves changed to Male Gnomes. The problem is the textures come out a little funky if the file name isn't patch-Z. I've gotten them to work for the most part if i substitute the Z for some other letter but they don't look exactly right. I'd really like to know if there is a way to get all of the changes to load properly without a whole lot of technical stuff because I'm not very well versed in this stuff. Thanks in advance.

Orc Female into Gnome Female, I've tried countless times following your guide, my edit looks good and all, but wow just crashes using my edit.

for the ones who dont get this,

1. Download your file (Race X Gender to Race Y Gender)
2. Download Kynox model edit fix here
3. Put the WoWme.exe in the wow folder
4. the Patch-X.MPQ file in the data folder
5. Start the game with the WoWme.exe (VISTA/WIN7 START WITH ADMIN)
