EDIT: BTW, Chinese doesn't really exist. Chinese is more of a "language family". Inhabitants of China all speak similar but slightly different dialects.
The dialect used for WoW is usually pinyin.

EDIT: Just noticed something.... what you said last is reasonably correct. However all chinese characters mean the same thing... i.e. the Putonghua or Mandarin characters have the same meaning as the GuangDong or Cantonese characters and even look the same... however the pinying or pronounciation is different =)
