There's a new mount engineering mount coming out, sky golem. The mount looks pretty nice, and it pretty cheap to make.

this comes to a total of Ghost Iron Ore (4200x)- 210 stacks of ghost iron ore (4200/20)

on my realm Ghost Iron Ore is going for about 50-75g a stack and that would lead to this mount costing anywhere from 10,500G-15,750G if you buy straight Ghost Iron Ore and get it transmuted, not including procs

buying straight living steel, (500-750g) you would be looking at about 15,000-22,500G without including the daily CD" - wowhead

Assuming you make energy sources every day for 30 days starting the day the patch hits, it wouldn't be hard to sell a sky golem for 100k for a minimum of about 80k profit.

When people say stockpile how much are they typically talking about? I have 5 Hyjal Expedition Bags full of herbs and 6 Mammoth Mining Bags full of ore.

stockpile thousands of stacks not bag fulls literally 2-3 guild bank full with 6 tabs each guild bank so 2000-10000 stacks altogether. That is assuming you have gold to work with if not then as much as you can since all is profit once prices rise.

Keep in mind the whole connected realms is coming so even if your realm has no raiders, pots and falsks will still be usefull. There will be more mats and more products. More sellers and more buyers and more acsess to bot materials so for some realms the price of everything will go up, and down for others.
