While taking a FP, try summoning a pet - Open pet journal -> Right click a pet -> Click summon

Just tried that out..gave me a laugh. lol. I did try to spam click summon to see if that would achieve any other results but have yet to witness any variation. Comical at leastThanks snickles!
That is true or at least was true any time you log out on a FTP
If you log out, enter a dungeon, LFR, BG, Arena or for any other reason interupt your flight. it will drop you off at the next flight path when you log/phase back in.

None of this has to do with any of your theories. the flight changing direction is just a waypoint issue that has been happening for some time now (at the earliest i remember it started happening to me at cata release, first noticed in hyjal flights). pretty sure the speed of the flight is making the mount go past the waypoint and it realizes and turns to touch it then continues.
as for the dropping you off at the closest FP, it has been that way since as early as BC (cant remember vanilla well enough to say it worked then). you could just log out and back in and be dropped off at the next waypoint.
