That to but really its because in lore any race can be a dk frankly if the lich king wanted to he could make a dk snake. (idk put a brain add some arms and legs etc?)

First death knights were "made" by Gul'dan, and they were human knights (not paladins.)
Every race fits as DK imho. Lich King's powers should be able to make non-paladins DKs aswell.
