I've searched in the *.mpq files and no luck finding the model. only the textures. I belief you have to download the model somewhere.

There is no such thing as a server with decent working DK service, they are bugged everywhere somehow at the moment. I'm playing on crogges WotLK server and its working fine w/o crashes (its Mangos), but the DK's there are nude and without working talents.

You cannot say that they are fully working, because they are not fully working even on retail.
