If you deleted your Ivus Gear, when they delete the gear you will be able to restore it using the restore feature, just wait for next week or a few weeks out and restore all.

Easy...When Blizz deletes the gear, its gone. But when U delete, vendoring / Disenchanting them...you`ll "Probably" be able to restore the stuff.

Shouldn't be to hard for the to also check for any deleted or sold items.

Also item restoring Azerite Armour obtained post 8.1 actually costs Residuum, i tried a similar thing a few days ago. So sure you could delete 10 azerite armor gained from Ivus, but its going to cost you 350 Residuum to restore it.
