When you do the jousting match against the NPC, you can have a friend to taunt the NPC. While taunted, NPC will stand still and attack your friend. The damage is easily heal through, and you can simply burn down the npc.

A nice trick is for "Lance A lot" when you have the quest you can finish the achievement on the first time by just visiting every NPC before you hand in

lance a lot is possibly as easy as starting the torn, it's such a quick and easy fight, keep your sheilds at 3 and spam charge = win , and i have done this so it's possible
