Its Very simple, The mounts themselves have an HP bar almost like a pet roughly 5k HP. The enemy can choose to attack the rider(player) or his mount Chopper, Tundra mount, and if there is any other multi person mounts. When the mounts HP reaches zero it gets destroyed kicking you off the mount. However if you mount on the chopper then cast the second mount, one of the two mounts i posted Blizzcon bear mount or Headless horsemen mount when the chopper dies you default to the second mount.
