Only Emulator with support for lua is ArcEmu. So you're kinda stuck with that option if you want to script in lua.
I prefer ArcEmu.
Which is better is all based off of preference and opinion. I prefer Arcemu because it was what I started with. There are many more stable things now though. But he is correct about the Lua part.
ArcEmu-Wiki is the main site on it. They have tutorials on Lua on there.

MaNGOS is my personal favorite it's the most stable fully functional emulator out there. Trinity is just based of MaNGOS so I don't see the point in using that since MaNGOS has been around since 2006 the only problem is people don't show mangos love anymore so it's near impossible to get a cms website for it now days.
Converting a trinityCMS to mangos is no big deal tho. And for a productional server (public) i would rather use TC2, because of all their misc fixes etc. The MaNGOS team is working on general solutions for everything, there are no hackfixes inside MaNGOS really, all mangos code is *clean* You can also look into "MaNGOSR2" They are very professional and they still keep in touch with MaNGOS/master.
3.3.5 = MaNGOS(R2), TrinityCore
2.4.3 = MaNGOS-One, OregonCore (Or Skyfire-One but it seems to be dead already)
1.12.1 = Mangos-Zero

I don't think it is really questionable that TrinityCore / Mangos are way ahead of ArcEmu in terms of development at this point in time.
However, ArcEmu is a lot easier to begin with due to the way things are handled and the scripting language support.
As you said, it might be a good idea to start with ArcEmu and then move into TrinityCore when you are more experienced. The problem with this is that you might pick up some bad habbits or misconceptions though, and it is a big learning curve.
