I need a guide about how can I make a custom-conversation with a NPC.

Well.. If you mean how do you make a script to make NPC gossip functions like menus and such.. There is probably an example script somewhere in the your Trinity files. For Mangos there is a Gossip example in the scriptdev2 folders. If you mean through the DB then you are looking for the Gossip menu tables and such.
