So for a long term server, Trinity or Arcemu. This will be Blizzlike + custom content, I hear Trinity stomps arc emu for stability and blizz-like, but can it truly be customized (and just a hassle?) or is it just not possible to do some of the customizations on trinity, I've got a team working on my new priv. server now in arcemu, but I am thinking of recreating the server with a second team in Trinity to take the first ones place long term.

It's very easy to customize trinitycore, actually much easier than ArcEmu, a lot of people use ArcEmu because they cba to learn C++ so they use Lua instead.

How so?

With TrinityCore whenever you want to customise it, you have to take it right back to the source code, where it is originally handled. There is no such thing as manipulating data from inside the game, or even often through the database. It must often be changed through the DBC files and when making edits to directly edit the core where it is handled rather than a new class.

This makes development slower, but once you get going and have the basic functionality of what you need written out, it is indeed much better in the long run.

and how much would c++ people charge for creating a server etc if I were to go the paid route?

Depends. Some would do it for free, but if you want a "professional" C++ dev, experienced in the Trinity core, you're probably gonna have to expect him/her to want payment. How much though, I can't say.
OnTopic: I agree with StoneHarry. If you can find proper C++ devs, go with Trinity, but if you really want much customization, and you want it done relatively fast, you'll probably wanna go with ArcEmu and get a couple of Lua devs.
