Do they have data for items, levels, creature spawns, Npc's etc?

I do know they have textures, maps, wmo, and m2.

they have models of items... and the spells but not the items themselves... those are made in DB using the models in the MPQ files...
same for npcs, models are stored in wow client and the spawns, items, drop, lvl is stored in a database (ncdb for example)
