obstacle courses that are insanely well done, there was a server once i was on that had the perfect race track obstacle course
new innovative and "makes sense" pvp zones again this server escapes my memory but they had quel danas into a completely custom pvp hub and had a capture city script for orgrimmar/stormwind that was ballz to the wallz fun (we only took over stormwind twice and it reset in 12 hours but all the human npcs died when we took it over and was replaced with a bunch of horde npcs aswell as certain horde gameobjects
no flying mounts
got badges of honor from doing bgs/arenas that was used for a custom quest to award you one custom weapon that was very strong (not game breaking) but like ilvl 290 gear for 3.3.5 (ofc quest would be done and you couldn't repeat it)
had a ranking system that gave the old titles back like grand marshal
had a custom patch that would allow all class/race combos

The ability to 'level down' so you can experience older content at the appropriate level. It is something I've always dreamed of seeing on any private server.
