Please could you tell me if this is correct.

So when uses FlyGPS and dropping a spoofed location its blinking on and off going from my current location to the spoofed one, my signal on my phone has 2 bars but I'm on WiFi and have the high accuracy turned on.
The spoofed location is around 7km away so its not that far.

Is this bad, in the sense will I get banned?

This is different for everybody. I spoof to japan , hongkong , usa (keepin in mind travel times). do some sniping. and no bans.
Others report that they have their account banned for using this.
Depends on many factors.

i can't say for 100% that ur safe.
U should keep in mind that there is a chance that u can get banned and that chance will always exist since this is still cheating.

I went into the FlyGPS settings and changed the update interval to 50 instead of 500 and its still blinking but not by my current location, is it better to drop the update interval or not?

i have never touched any settings in flygps , only to type in coords & add to favorite

EDIT = i just caught my first ditto in New york , it was a karp but it changed into a ditto

I have read a few from the internet and seen post on Facebook.. someone said at first it was a Pidgey then when catched it turned into a Ditto. The post looks real its a screenshot from their phones.

I been using alot when the app came out last week im from the USA i spoof to Japan try to catch some Lapras but it was to late they got rid of it, but i been getting Dragonite and Snorlax alot but i decide to stay there in Japan for awhile. i been scanning the map alot. What do you guys use for pokesniper because i thought it was all down.
