From what I can tell the kernel version is hard coded and can't be changed. Only option would be to flash it with a new rom but that might screw up the GPS spoofing.
I don't think that Niantic checks the kernel version anyway but can't say 100% sure.
With it rooted you can use Mobile Faker, Xposed installer and Root Cloaker Plus. Test out on some fake accounts for a while to be safe.
Does anyone have any other ideas?

I found the "ubuntu" part in the ro.build.host... I too don't think that Niantic checks the kernel version...

This is so terrible, there are so many variables that does not work. You can only change a mere model ID in init.nox.sh, But there are many more variables that betray you that it is from NOX
These are the ones that shows it is from NOX:
ro.boot.bootloader
ro.build.product
ro.hardware
ro.product.board
ro.product.name
ro.serialno
some of these varibales are stored in /init.nox.rc and these are reverted to default each time the device boots up
Also, I am not able to change these variables using ADB too.

How can we change android version on nox because on 4.4.2 pokemon go isn't suppose to be downloadable from the play store

try changing build.prop. This is one file that does not change to default after reboot and it should work
But there is no point since there are many variables that will give away that it is from NOX
