Looking for suggestions: What to host?

I just rented a dedicated box for myself and now looking into possible options on what to do with it.

I won't be needing even 10% of the server capabilities myself propably so looking to start some hosting.
Only got a Mumble server running right now, maybe looking into Minecraft but it seems it requires constant administration if you wanna keep the server clean of people just ****ing about.

Hopefully will be selling shells so you can use bnc/irssi for ingame gold (Diablo, WoW, maybe EVE?)

Any ideas/suggestions? Will still take me a day or two to set it up properly.

Distro is Debian.
