As I was looking for any guides or information I could find on DBC editing, I came across a post that contained 11 pages of requests and responses of people asking to change their PvP titles. I thought that, because this was something that was relatively simple to do, and that I haven't made any posts here yet, that I would open with a contribution.
Editing your PvP title is actually a very simple process.
Firstly, you'll need to open:

<World of Warcraft Directory>/Data/xxXX/locale-xxXX.mpq
Replace xxXX with your client's language extension, enUS, enGB, frFR, etc.
From inside this MPQ, extract:

DBCFilesClient/CharTitles.dbc
Once you've extracted this file, either convert it to a CSV using one of the tools in the sticky at the top of this forum, or with DBCEditor, which allows you to edit DBC files without converting them. I personally don't like this program, since I prefer working with CSV's in OpenOffice.
Now, after you've converted to a CSV, open this CSV in your editor of choice. Look down the third column, and find the title you want to change. Once you find it, simply replace that title with whatever you want to change it to say, save the CSV, and close the editor.
Now, convert the CSV file back to CharTitles.dbc, and build the appropriate patch-X.mpq file.

Place it in your Data folder, and you're good to go.
