I donno if this has been asked somewhere, if so forgive me please.

But is it possible to edit the old water with the new cata water already?

Nope. it is not possible to edit the old water into new water due to several factors:
- The old water is a flat animated texture pattern
- The new water in Cataclysm was reworked completely, since it now has a reflection and physics-based properties (actual ripples and such, not static blp ripples like we have them now) so it's not possible to do this without reprogramming WoW itself

Just be patient and wait for Cata to come out
