This may be old but i think i can help.

Make sure you put in 2 separate patches, 1 containing all of the Tauren Male .m2 folder set (CHARACTER), and 1 containing all the contents of the (Character and the Character\Male) Folder, KEEP IN MIND ABOUT THE DIFFERENCES IN THE CAPS.

This issue happens with all > Tauren afaik. Is the process you posted there a fix to the 'Extra Texture Map missing for Tail, Hair, etc..' issue?
