[Question] Re-Model, Re-Skin?

I am a bit of a rookie at all this remodel, model swapping, skins, and all that. I have been a WoW player for roughly four years and am absolutely sick and tired of graphics that look, at times, worse than the original Tomb Raider imagery. The most outdated models among these are the cats, birds, and wolves. I hoped there would be some improvement with the new expansions. And there were, in some cases. But in other cases, it looks to me as though Blizzard has NO idea about basic animal physiology. For example; Gryphon wings do not have fingers like that, nor do the vestigial thumb....stick out of the crook of the elbow.

All of these graphical flaws have so greatly annoyed me that I would like to take the first step into making my own. Is there, for example, a tool in this site that I can use to make my own models and effectively have them placed in game?

Also, are there any models that help in re-skinning both a new model or an older one? I've searched around and am unable to find one - it will be my first experiment, to re-color and re-draw a texture for a model in an attempt to make it better than the original. If someone can help me out with this, please, your assistance would be greatly appreciated.
