I'd rather learn to do this myself like I once did but this one was tough.
When you say "Open the .MPQ and delete the "ChrRaces.dbc", " I assume that you mean the "patch-X.MPQ", but there's no such thing as ChrRaces.dbc there. I open the .MPQ with MWS without success.

The patches I'm trying to make is;
Human Female to Undead Male
Human Female to Night Elf Female
Undead Male to Human Female

If I get the hang of how to create patches for 3.2 I'll gladly take requests on my own and start a collection of 3.2 working patches.

Hey there, awesome job on fixing edits so far.
I've tried following your guides to fix my favourite swaps, at the first glimpse it seems to be working OK (I've eliminated bare feet, blue boxes and fixed sizes), however my WoW happens to crash after a few minutes of running.
I'm running an EU version of the game, used DBC Editor / MyWarcraftStudio from links in guides. Do you have any idea on how to fix this problem?

I'll include my MPQ's in case people wanna try them out / share feedback.
Maybe it will work for others without crashing:

DrF - BeF
DrF - OrM
DrF - ScM
GnF - ScM

I've got an another edit on my cause, apparently I've just screwed something internally in my game's files, cos now I'm also getting crashes even without using model changes.
The conclusion would be that my fixes are most likely valid, I'll just have to run wow repair and check it again afterwards..

GnM to ScM is not working for me i put the .MPQ into the data folder and started the game with WoWme 3.2 and still dosn't work any advice?

I'll look it later, make sure you renamed the .MPQ in something like "Patch-X.MPQ" (X like any letter or number except 2)
