With this, I will show you, what you can catch in the different zones, and in the bottom, I talk about the different fish, what they can be cooked into, what they sell per stack (I hope I get time to put in some images about where to fish). I hope you will enjoy.

Barrelhead Goby ~ 4g per stack : Can be cooked into Sauteed Goby

Bonescale Snapper ~ 10g per stack : Can be cooked into Grilled Bonescale or Snapper Extreme

Borean Man O' War ~ 6g per stack : Can be cooked into Black Jelly

Deep Sea Monsterbelly ~ 40g per stack : Part of Gigantic Feast

Dragonfin Angelfish ~ 40g per stack : Can be cooked into Dragonfin Filet or Blackened Dragonfin

Fangtooth Herring ~ 20g per stack : Part of Haunted Herring or can be cooked into Pickled Fangtooth or Spicy Fried Herring

Glacial Salmon ~ 40g per stack : Part of Small Feast or Fish Feast or can be cooked into Smoked Salmon or Firecracker Salmon

Glassfin Minnow ~ 10g per stack : For alchemy, Ethereal Oil

Imperial Manta Ray ~ 20g per stack : Can be cooked into Baked Manta Ray or Imperial Manta Steak

Musselback Sculpin ~ 40g per stack : Part of Fish Feast or can be cooked into Grilled Sculpin or Poached Northern Sculpin

Nettlefish ~ 40g per stack : Part of Fish Feast or Small Feast or can be cooked into Poached Nettlefish or Spicy Blue Nettlefish

Rockfin Grouper ~ 10g per stack : Part of Gigantic Feast or can be cooked into Smoked Rockfin

Misc.

Giant Darkwater Clam : When opened, 3-5 Succulent Clam Meat and a chance for Northsea Pearl or Siren's Tear

Darkwater Clam : When opened, Succulent Clam Meat and a chance for Northsea Pearl

Reinforced Crate : Either contains 2-3 Cobalt Ore, 3-4 Borean Leather Scraps or 2-3 Frostweave Cloth

Crystallized Water ~ 1g each : If you get ten, you can turn them into one Eternal Water

I hope you can use this to something. My favorite spot to farm is in Wintergrasp, because you can get Glacial Salmon, Musselback Sculpin and Nettlefish, all the fish mats for Fish Feast wich many raids uses + the Giant Darkwater Clam where there is a chance for getting Siren's Tear.

I will try to update soon with some pictures for each zone, I just first need to think of the easiest layout

haha pretty cool shit man I dont got the fishing lvl but I'm trying any idea where the best spot to farm for the turtle is ?

The best spot to farm for your turtle is on a thread already on this site, you can find it easily I assume.

But my advice is that you don't specifically farm for it and farm in pools containing fish that are most profitable on your server. I have my turtle and got him within and hour of sholzar basin fishing on patch day, and its just plain luck wether you get easily or not. Might as well make money while you are doing it.
