Professions to pick

Quite noobish question, but I'm kinda stuck with it...
Which professions should I pick on which of my 3 characters?
I've got a retribution pala, a brewmaster monk and a frost mage.
The mage ain't 90 yet but I'm gonna level it past 60, pre-order WoD and get a free professions boost.
My pala has 600 tailoring and enchanting (not much rare recipes though) which is totally not the best professions combo for a paladin.

Main priority: making gold and providing myself with stuff to make my life easier (Royal Satchel etc)

Thinking about going as follows:
Mage - enchanting/tailoring
Pala - jewelcrafting/engineering
Monk - mining/?

Professions don't matter in the next expo when it comes to stats.
Rest of the crafting professions will prob make you about an even amount.

I'd recomend taking a look at Wowhead's overview of professions and look at what would fit your goal's best.
