Are there any good options to protect themselves against chargeback ?
If so who takes the lowest fees are sick tired of paypal when they charge for absolutely everything

Keep screenshots of everything, save conversations and never ever accept gift as a payment. Gift = paypal didn't make a penny, so they care less.

Gifts are normally not taxed. They're flat out 100% to 100%. Paypal wants to make money right? So give them a few bucks, follow their rules so their support will actually help you.
