Whats the appropiate way to sell gold?

I just got into selling gold and so far ive only sold one time and the guy gifted me the money then i gave him the gold and everything was good.
But some of these new buyers want me to give them the gold first and idk they just make me feel nervous that im going to get scammed.
I was going to sell to one guy but once we got next to each other i asked him if he was 1 click away from gifting me after I gave him the gold. He replied Yes, then right away i said "wow scammer, i didnt even give u the paypal email yet" and right after he said " i need the email" so i assumed he was a scammer and didnt sell to him. then another guy try to buy but his AIM name was something random so right off the bat i was suspicious anyhow i kept talking to this guy and i asked him the name of his main and he logged into a 71 DK then once i said i wasnt going to sell to him because i was too suspicious of him he said that he was going to report me even though i never even whispered him in game.

Basically I thought both were scammers.

But does anyone know any steps i can go through to make sure the person isnt going to scam? Whats the appropriate way to sell, the steps basically?

Best way is to just sell to them 1k at a time up until about 5k, even less than 1k if they will let you do that, just so that you can build a little trust with them. Thats what I always do if I'm a little nervous.
