Rolling means making a character, so if someone says "I re-rolled a mage" in other words that means " I made a mage"
It also kind of means that you're switching which main character you want to play.
If you reroll from warlock to mage, it means you've kind of came to a stop on your warlock, and are now going to be playing a mage instead.

The whole "roll" thing came around from the old pen & paper RPGs ( Dungeons and Dragons, et cetera.) The first MMOs all copied the old style of making new characters, so it has evolved into being a normal term. Sort of like how "ding" is used when you level up, although there is no real "ding" sound. The "ding" started in Dark Age of Camelot because when you leveled, you really did ding.
The reason for the "roll" term, anyways, is that you physically had to roll die to figure out your character's stats in the old pen & paper RPGs.
