Minotaur = Half bull/half man. From the greek mythology of the creature residing in Minos' labyrinth. Minotaur is roughly translated into english as Bull of Minos.
Taur has then become a common name of creatures of half-man nature, in your example of half horse, the name is Centaur, not Minotaur. There are also other later fiction novels that spins off on things like Dracotaur, etc.
Tauren more likely comes from "taur", the greek word for bull, than from the word nature.
