Are you asking this as a server admin or a player?

If a Admin: Go into the database, go into a table named "items" or something, and scroll across the columns till you find stack count, remember where it is, find the gem, go to stack count, and change it to your number.

Notice that your core might not support socketing stacked gems; It might take the entire stack when you socket it.
