Unfortunately, I'm finding that games just don't seem to draw me into be that curious anymore. Perhaps its because I've been through the process so many times at this point in my life, it becomes a chore to try and pick apart what a developer is trying to do.
What is seen by some as spoon-feeding in some games, IMO, is conveying the necessary information to understand the game mechanics. Some games do it well and interweave the information into the gameplay and story, others just dump a 50 page "help menu" that you have to read through to understand it, and still others, like PoE IMO, do nothing at all. Then there is a game like WoW, that the game itself isn't bad at doing this, but the community has picked the bones of all information and secrets and bleached them before the content even hits the playable stage, what fun is that? I find the mystery and discover process fun, but not when it is so unintuitive that it doesn't even tell you the basics of why you have all these items. Perhaps you could say that this is their attempt to swing the complexity pendulum back the other way, but there is a point when you go too far.

This is because PoE is to cater to the more 'hardcore' player, it is a niche game unlike d3 which is more towards the casuals.
Most of the basic things are meant to be figured out naturally, and you can do pretty good just knowing just these things to a certain degree. (Kill monsters, get loot, do quests, ext.)
Here are some threads on the forums for new players that have some of the basics, don't bother reading all of it cause it will take too long, but just skim it and you should have a better understanding of things.

For the more gritty mechanics, yea, you probably are not going to figure them out playing the game. Things like vendoring recipies, understanding conversions and how the currencies work, loot mechanics, item affixes, ext.
PoE is a very in-depth game with many many finer details, it would be near impossible to spoon-feed it all to new players without having tips pop up every .5seconds.
The game is designed for the hardcore players in mind, which not many games do these days.
