is it possible when you change a race ---> race that it only shows up on your character, not every character of that race that you see?

No it is not becasue when you switch the model it switches ever single person/character/npc/anything with that model to the new one so by switching a tauren to say a gnome then every single tauren will be a gnome on your screen.

yeah when model editing it does all changes to that WHOLE class and cannot just be added to one specific char

hairstyle and haircolr etc make no difference... If you change the model thousands of other people use then i bet you can guess what would happen to those thousands of other people.
