This is a latency issue: I have dial-up, with a constant of around 660ms on a good day...this happens to me a lot if I click jump right before the mount cast time finishes. Doing it with fast internet would just require much more precise timing - right as your mount cast finishes but before the smokepoof animation and your actual mount appearing. I can guarantee this is what causes the no animation for flying mounts; if you do this on a ground mount then your mount will jump straight into the air even though mounts don't normally jump while standing still (which could possibly be used for exploration?)
Happening to me plenty of time, mostly when you are in a hurry you jump like 0.1-.0.4 secs before you cast it. Nothing special about this, probably happens to all of those who have flying mounts.^^

I didn't know this wasn't just clientside o_O. I do it all the time to not have the big stupid flapping wings all over the screen, practice makes perfect. The way i do it however is while using Quartz and hitting auto-run + space at the red section (doesn't need to have bad latency either, im seldom above 100ms, usually ~40ish)

and hold down both mouse buttons

Yeah i know what you mean.
It usually happens when I start casting the mount, then I'm too eager to fly away, and press the spacebar just as it's mounted up.
I didn't know other's would see the same thing though, always thought it was a client sided thing.
