how find the updatefields

Hello, I've been looking for some time now how to get the different structures that make up updatefields in wow.

I know how to use IDA pro, but I admit that how this part works is difficult to understand.

Where can I find these different information in the client?

I've find the server opcode and i search how to have updatefields from 0x27CB.

It"s from this opcode or other search?

And in the same order of question, how i can find the opcode name, or how i can dump opcodes ?
